The invention of pithiviers dates from the 17th century with the invention of the pastry but the addition of almond cream is believed to date back to the Roman tradition.<\/span><\/span><\/p>\n

There are two kinds of pithiviers<\/a> :<\/span><\/p>\n

Puff pithiviers<\/em> is best known. <\/span>It is relatively close to the Galette des Rois in the northern half of France.<\/span><\/p>\n

The fondant pithivier<\/em>s is older. <\/span>It can be covered with a glaze and some candied fruits.<\/span><\/p>\n

The pastry is made of puff pastry and a filling composed of as many pastry cream as almond powder and granulated sugar with a few drops of almond flavoring.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"
